Simple Jalapeño BBQ Bacon Chicken Sandwich

Some nights require a simple meal. One in which mama is still feeding the family, but without adding stress and extra work to her day. You know what I mean.

The night this recipe came into creation, our simple meal was a grilled chicken sandwich. Grilled chicken and whole wheat buns. Technically I could have left well enough alone and just called this dinner. But my taste buds were demanding something more flavorful.

Curse you, taste buds! Dinner was supposed to be simple tonight.

Jalapeno Chicken Sandwich

My mind reeled. What could I quickly add to our sandwich that would take it from bland and boring to ba-zinga with little to no prep?

Our usual options to add to grilled chicken are BBQ sauce, honey mustard, and ketchup at the request of our youngest.

I stared blankly into the refrigerator.

Onions? No. Lettuce? No. Think, Lish. Think! What goes with BBQ and chicken? 

And then, as if a light shown down from heaven spotlighting the package encompassing savory strips of pork, I decided bacon was exactly what this sandwich required. I mean, seriously, when has bacon ever done me wrong?

Suddenly, making dinner became fun. What else could I pair with BBQ and bacon?

For the hubby and I, I pulled out the jalapeño cheese and sliced jalapeño rings. Our boys, however, who can’t handle quiet so much heat, opted for pickles and Munster cheese. What had started out as a not-so-exciting dinner now became a culinary creation just by adding a few additional touches… a little spice, a little cheese, a little crunch.

This may be my favorite kind of meal to make. One in which I can start with a simple “base” food that my family can personalize to their own taste. Honestly, while the name of the sandwich may sound fancy, I was just trying to name all the ingredients and make your mouth water a little more. This is totally a no prep meal. No mixing. No slicing (except in the summer when I use fresh jalapeños from our garden). Just cook up the bacon while the chicken is on the grill.

We’ll often pair the sandwich with corn on the cob, fresh veggies, or a fruit salad. It’s light and refreshing and a meal that our family has requested over and over and over again.

Simple Jalapeño BBQ Bacon Chicken Sandwich

Ingredients

  • 1 package boneless skinless chicken tenderloins
  • 6 whole wheat buns
  • 6 slices Jalapeño cheese slices
  • 1.5 cups jalapeño slices
  • 6 slices bacon
  • 3/4 cup BBQ sauce

Instructions

  • Grill chicken approximately 10 minutes per side on low-medium heat.
  • While chicken is on the grill, cook bacon.
  • Serve with remaining ingredients for a make-your-own sandwich!
