Spinach & Bacon Quiche Bites

I love breakfast. Not the cereal and toast kind of breakfast. But a good ol’ hearty breakfast with eggs and potatoes and sausage and bacon. I don’t make a fancy breakfast on school mornings. Weekends and mornings with my mom’s group, however, are a different story. I try to come up with something that would be a treat for the group I’m serving. What is something different that’ll turn a plain egg into a breakfast delicacy? And yet still be simple? Well, these spinach and bacon quiche bites tastefully answer all those questions! And they’re healthy!

Spinach and Bacon Quiche Bites

What exactly is a quiche bite? It’s like a breakfast appetizer. They’re individual quiches made out of a muffin pan. That’s it. It’s a single serving nibble that can be eaten as a finger food or a with fork. And it makes a great presentation.

I’ve made this recipe a couple times now for different groups of breakfast friends. The response was an overwhelming hit! In fact, my mom friends (you know who you are) were all asking for the recipe this morning. So it pushed me to come home and get it completed. Talk about buckling to peer pressure!

Before we dive in, I will tell you this is a crustless quiche. So in theory, you could technically call these little goodies “egg muffins”. But quiche is such a fun and foo-foo word that we’re gonna stick with it.

Anyways, the recipe can be done a couple different ways. Depending on how hungry your guests are might depend on the size of the bites you bake. If I know the food spread is going to be quite large, I will make the bites out of a mini muffin pan so that the serving size isn’t quite as big and your guests still has room for all the other delicious dishes being served. If I know that the quiche bites are going to be the heart of the meal, I’ll use a regular muffin pan.

The serving size on the recipe below is based on your guests eating two regular muffin sized quiche. Keep that in mind when deciding how many batches to make. But if you make too many… the quiche reheat nicely in the microwave. So don’t throw them away!

A couple serving tips… if you’re taking these quiche bites to an event and still want them to be served warm, remove the quiche from the muffin pan and place in a casserole dish that you can carry in an insulated tote. If you’re taking the quiche straight from the oven to the table, I’d still remove the quiche from the pan and place them in a bowl for presentation and easy of passing around the table. Try and keep them stacked together as much as possible to keep them warm longer.

Back to the recipe… it’s just four simple ingredients mixed together and spooned into a greased muffin pan. A girlfriend of mine couldn’t believe that it was just four ingredients. She asked me a couple times what seasonings I used. Salt? Anything? Nope. The bacon crumbles provides the perfect amount of saltiness so that nothing more is needed. Of course you could always add a little garlic to zest it up even more, but it really isn’t necessary.

Spinach & Bacon Quiche Bites

Prep Time:10 minutes
Cook Time:15 minutes
Total Time:25 minutes
Yields: 8

Ingredients

  • 10 eggs
  • 1 cup bacon crumbles
  • 1 cup mozzarella cheese
  • 3/4 cup chopped spinach, drained

Instructions

  • Preheat oven to 350 degrees.
  • Fry the bacon in a large skillet over medium heat until slightly crispy. Drain on paper towels to remove excess grease. Crumble.
  • In a large bowl, whisk eggs until yolk is mixed in.
  • Combine cheese, spinach, and bacon. Stir well.
  • Spoon mixture into greased muffin tins. Fill cups 2/3 of the way full.
  • Bake for 10-15 minutes. Make sure egg is done, but not browned around the edges.
  • Remove quiche bites from muffin tins. Serve hot.
