Spinach & Dill Dip

Warning: this recipe is kinda a big “dill”! Pun intended. What’s not funny though is how healthy and delicious this Spinach and Dill Dip is!

I have to admit that I am a dip-aholic! If there is dip on the table, that’s where you’ll find me. But to my demise, dip is typically not that healthy. So while I am trying to load up on veggies, I end up calorie overloading thanks to the dip I have to have to make those veggies go down.

So as I was flipping through the pages of a lifestyle magazine and saw this tip to use cottage cheese as a base to dip instead of sour cream or mayonnaise, I just had to try it!

And since I’m usually low on protein consumption, I liked that this clean-eating dip didn’t just go good with veggies, but it actually adds veggies and protein too!

Surprisingly, using Cottage Cheese as a dip base was great! Who knew?

Cottage Cheese has now become my secret ingredient to dip making. However, I will admit that using cottage cheese can be a bit tricky. If you over blend it in the food processor to get rid of the curds, it can become too smooth. In other words, runny. However, it doesn’t feel like a delicious creamy dip texture if you don’t get all the curds out. So blend cautiously.

I also found out the hard way that the cottage cheese needs to be pureed before adding in any other ingredients. My first attempt at making Spinach and Dill Dip turned my kitchen green.

I naively threw all the ingredients into my food processor at once. It would have made great Grinch food or a fun St. Patty’s day dish, but a dish of green goo that looks like Slimer from Ghostbusters on the table would probably scare away guests at your dinner party.

Pureeing the cottage cheese first creates a nice smooth base which all the other ingredients can be stirred into.

And once you’ve got the base down, you can try all kinds of flavorings like my Cheesy Bacon Ranch Dip (which is also made with Cottage Cheese and is to die for)!

Spinach & Dill Dip

Yields: 7

Ingredients

  • 1 cup Low Fat Cottage Cheese
  • 1/4 cup spinach - cooked & fine chopped (I use the frozen spinach from the freezer section so it's already pre-cooked & ready to use.)
  • 1 Tbsp. Dill weed
  • 1 tsp. dehydrated onion

Instructions

  • Puree cottage cheese until smooth and pour into bowl.
  • Stir in remaining ingredients.
  • Refrigerate for one hour so the dip sets up and to enhance flavor.

Seriously, you just gotta love a dip that’s healthy and packs as much punch as Popeye’s muscles!
